Last weekend we had the pleasure to cater a 50th birthday party in Redondo Beach. We worked with the Corman's for about a month to put together an Italian themed menu that wouldn't hurt the pocket book.
That part was easy, however, we learned that some people who would be attending the party were lactose intolerant, while others loved cheese. What to do?! Well we came up with some innovative compromises.
On the Menu:
Italian Wedding soup
Bruschetta 3 ways (tuscan white bean, roasted eggplant and red pepper, classic tomato)
Caprese on a stick tossed with homemade balsamic dressing
Baby romaine salad with cherry tomatoes, goat cheese, candied walnuts and balsamic dressing
Caesar salad with homemade croutons
vegetarian bolognese
creamy chicken and mushroom farfalle
3 chocolate brownies
3 chocolate brownies with peanut butter
fruit & fresh whipped vanilla cream
What we did to add creaminess to the veggie bolognese was place ricotta cheese on the side for those who wanted it. However, you could do a soy based product and place it in mixture, but we found it didn't meld that well with the flavors. So putting real ricotta on the side, was the best of both worlds.
According to Elizabeth Corman, "Everyone loved the food, and the Italian Wedding Soup is something that I kept hearing over and over about."
Unbeknownst to us, there was also a food blogger there, Beth, who writes for OMGYummyBlog who was so captivated by our "Caprese on a stick" that she took several pictures which ended up on the LA Times Daily Food blog, Twice!
It just goes to show you to always put your best forward. You never know who will be eating your food.

Crevier BMW National Sales Event
We had the honor of catering Crevier BMW's National Sales Day event. We were contacted by Veronica to deliver an array of sandwiches, our world famous pasta salad, fruit skewers and our wicked brew (mint iced-tea)
It was an all day event where BMW aficionados come to the dealership and learn about the latest BMW products and test drive the cars. After the test drive, they are treated to our gourmet eats. We served over 200 sandwiches that day between 11am-6pm and it was a huge success.

The event's color them was blue and black so we coordinated with blue and black napkins and plates
Our world famous pasta salad and cookies are shown in the stand.
Veronica later emailed us and said, "I know that these were just sandwiches, but they were like eating at a gourmet restaurant. Everyone was asking if you would give out your recipe's for the pasta salad and your tea."
